I was flabbergasted to discover that there isn’t a national salad day. There is Potato Salad Day (March 8) and Caesar Salad Day (July 4, natch), but what about all the other salads that pull us through harried lunchtimes, that bring the requisite crunch and acid to our dinners, that are so mighty they warrant a whole book?
